A comforting one-pan meal that’s rich, flavorful, and easy to make. This dish combines tender chicken, sweet paprika, creamy sauce, and fresh zucchini served over fluffy rice.
Ingredients
For the Chicken and Sauce:
· 4 boneless, skinless chicken thighs or breasts
· 2 tbsp olive oil
· 1 medium onion, diced
· 2 medium zucchini, halved and sliced
· 3 cloves garlic, minced
· 2 tbsp sweet paprika
· 1 tsp smoked paprika (optional, for depth)
· 1 cup chicken broth
· 1/2 cup heavy cream or plain Greek yogurt for a lighter version
· 1 tbsp tomato paste
· Salt and black pepper to taste
· Fresh parsley or dill for garnish
For the Rice:
· 1 cup long-grain white rice
· 2 cups water or chicken broth
· 1/2 tsp salt
Instructions
- Prepare the Rice:
Rinse rice under cold water. In a saucepan, combine rice, water or broth, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15–18 minutes until tender. Remove from heat and let it steam, covered, for 5 minutes. - Cook the Chicken:
Season chicken with salt, pepper, and 1 tsp paprika. Heat olive oil in a large skillet over medium-high heat. Brown chicken on both sides (about 5–6 minutes per side). Remove and set aside. - Sauté Vegetables:
In the same skillet, add onion and zucchini. Cook until softened, about 5–7 minutes. Add garlic and cook for another minute. - Make the Sauce:
Stir in paprika and tomato paste, cooking for 1 minute until fragrant. Pour in chicken broth, scraping up any browned bits from the pan. Bring to a simmer. - Finish Cooking:
Return chicken to the skillet. Reduce heat to medium-low, cover, and cook for 10–12 minutes until chicken is cooked through. - Add Cream:
Stir in heavy cream (or yogurt) and simmer gently for 2–3 minutes. Adjust seasoning with salt and pepper. - Serve:
Fluff rice with a fork. Serve chicken and creamy paprika sauce over rice, garnished with fresh herbs.
