Homemade Pickled Beets Recipe
Sweet, tangy, and packed with flavor, homemade pickled beets are a delicious addition to salads, sandwiches, or enjoyed straight from the jar. They’re easy to make at home and offer a perfect balance of earthy beet flavor and zesty brine.
Ingredients
- 6 medium beets (washed and trimmed)
- 1 cup white vinegar
- 1 cup water
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves (optional)
- 1/2 teaspoon whole black peppercorns (optional)
- 1 cinnamon stick (optional)
Instructions
- Boil the beets
Place the beets in a large pot and cover with water. Bring to a boil and cook until the beets are fork-tender, about 30 to 40 minutes depending on their size. Once done, drain and allow them to cool enough to handle. - Peel and slice
Once the beets are cool, remove the skins. They should slide off easily by rubbing with your hands or using a paper towel. Slice the beets into rounds or wedges, based on your preference. - Prepare the brine
In a medium saucepan, combine the vinegar, water, sugar, salt, and any of the optional spices you like. Bring the mixture to a boil over medium-high heat, stirring until the sugar has completely dissolved. Remove from heat. - Pack the jars
Place the sliced beets into sterilized mason jars. Pour the hot brine over the beets, leaving about 1/2 inch of headspace at the top. Make sure the slices are fully submerged. - Seal and chill
Seal the jars tightly with clean lids. Allow them to cool to room temperature, then refrigerate. For the best flavor, let the beets pickle for at least 24 hours before eating. The flavor deepens over time, and they’re often even better after a few days.
Serving Suggestions
Pickled beets are perfect in grain bowls, tossed into green salads, or served alongside roasted meats. They also make a colorful addition to charcuterie boards or can be enjoyed as a tangy snack on their own.
Storage Tips
These refrigerator pickles will stay fresh for up to 4 weeks when kept in an airtight jar in the fridge. Always use clean utensils when serving to help extend their shelf life.
Optional Variations
- Add sliced red onions or carrots for a colorful medley.
- Use apple cider vinegar for a fruitier, milder acidity.
- Try golden beets for a different flavor and color profile.
