Garlic-Butter Chicken Bites with Parmesan Cream Pasta

Ingredients:
– 2 chicken breasts, cut into bite-sized cubes (about 500g)
– 4 tablespoons unsalted butter (56g)
– 4 cloves garlic, minced
– 1 teaspoon dried thyme
– Salt and pepper, to taste
– 2 tablespoons olive oil (30ml)
– 1/2 cup chicken broth (120ml)
– 1/4 cup heavy cream (60ml)
– 1/2 cup grated Parmesan cheese (50g)
– 1/2 pound pasta linguine or spaghetti (225g)
– Fresh parsley, chopped for garnish

Recipe Steps:
In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken cubes with salt, pepper, and thyme. Add the chicken to the skillet and cook for 5-7 minutes, or until golden brown and cooked through. Remove from the pan and set aside.

In the same skillet, add the butter and minced garlic. Sauté the garlic for 1-2 minutes until fragrant, being careful not to burn it. Add chicken broth and bring to a simmer. Let it cook for 2-3 minutes.

Add the heavy cream to the skillet and stir in the Parmesan cheese. Cook for another 2 minutes until the sauce is smooth and creamy. Adjust seasoning with salt and pepper.

Return the cooked chicken to the skillet and stir in the cooked pasta. Toss everything together until well combined and heated through. Garnish with fresh parsley before serving.
